Have just made a leek and carrot soup. A new one on me. If you have a sweet tooth this would be ideal. The carrots sweetness comes through but didn't over flavour the leeks Very Happy

sounds lovely....what sort of quantities... i have loads of carrots..no leeks though

will try it in the week Smile

I used one large leek, two medium carrots and veg stock. Cubed the veg poured on stock about half way up the bowl and microwaved for 8 minutes. Then liquidized it, added some black pepper and ate Very Happy

This made two small bowls.

We often have homemade soup on a Monday with leftover veg from Sunday roast - hubby always cooks far too much Rolling Eyes If we've had chicken we make stock with the bones, if not use a stock cube or two, whizz the stock up with the leftover veg & season, very simple & healthy tea - tomorrows will have leeks, carrot & swede, broccoli, peas & sweetcorn oh and some potatoes, bit of a leek & potato soup with extra veg, delicious Razz

sweet and sour sauce should be fine Smilez, just check the fat per 100g on the label...less than 5 per cent is ok or check for the 'lite' options in the sauces

soup is being made today after shopping!
